Rosemary:
This Mediterranean shrub is only half hardy in Scotland so you’ll need to give it some protection in winter and grow it in a sheltered spot. It needs good drainage and a light soil.
Use the leaves with grilled roasts and meats.
Rosemary is said to have antiseptic qualities and can be used as a hair rinse for brunettes.
Thyme:
Thyme has small, scented leaves and needs good drainage and a sunny spot. Trim plants regularly to prevent them from becoming leggy.
Thyme is used in soups, stews, with meat, fish and vegetables. Add a few stalks to white wine sauce for extra flavour.
It is a powerful antiseptic and can be used as a gargle for sore throats.
Mint:
Mint is a creeping plant which should be contained in a pot sunk into the ground to stop it spreading all over your garden.
It is used in yoghurt, with vegetables and is most commonly associated with lamb.
Mint tea aids digestion.
Oregano:
This Mediterranean herb grows well in rock gardens or wherever there is good drainage. It needs a sunny position. It is really good for attracting bees and butterflies.
Oregano goes well with italian cooking - in pasta sauces, in soups, stews and roasts.
It is an antiseptic and also helps to soothe and settle the stomach.
